Potato and Fish Soup

  • 1-2 cups cooked fish. Blackend walleye was good.
  • ½ pound potatoes, washed - peeled if desired.
  • 1 cup onion, diced fine
  • 2-3 garlic clove, diced
  • 1 stalk celery chopped
  • ¼ cup butter
  • 1-2 cups evaporated milk, or whole milk
  • ¼ cup heavy cream - or not..
  • Salt and pepper to taste
  • 2 tablespoons green onions, or parsley - finely chopped

Dice the potatoes. Simmer until tender.

Slowly cook the onion and garlic in butter.

Partly drain the potatoes. Give them just a little mash, some will stay whole, some mashed for thickned soup.

Add the cooked onion, butter, milk, and cream.
Salt, pepper to taste.
Add fish and allow to warm. Since it is already cooked be careful not to over cook the fish. With the blackened walleye we just put the fish on top of the pot of soup, did notmix it in.
Serve with a pat of butter and a sprinkle of parsley on top.
