Catfish Gumbo

2 to 4 cups veggies as follows
    1 cup chopped onions
    1 cup chopped green peppers or veggie of choice
    1 cup zucchini or veggie of choice
    1/2 cup frozen corn or veggie of choice
    1/2 cup leeks or veggie of choice
2-4 cloves garlic, crushed and chopped
2 table spoons butter or several slices bacon (more or less)

2 cans chicken or beef broth
1 can chopped tomatoes, undrained
salt, pepper to taste
1 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon old bay seasoning or paprika
cayenne pepper to taste
2 bay leaf

1 pound catfish cut in small pieces (other seafood is good also)
sliced frozen okra - 1 cup to 1/2 package depending on preference
hot cooked rice - brown is best

Saute veggies except okra in oil/bacon/butter 'till tender

Stir in everything else except catfish, zucchini, okra and rice. Bring to boil and simmer covered for 20 minutes. Remember to stir once in a while. Add zucchini and simmer another 10 minutes.

Add catfish and simmer 5-6minutes depending on chunk size

Add okra, simmer 4 minutes - do not over cook!

Remove bay leaf and serve over rice. A little Gumbo Filet is good sprinkled on top.
