Microwaved Beet Bean Tomato Basil Cucumber Soup
(What The Garden Provided For Lunch Today Soup)
I was on Zorba Paster's "On Your Health" with this recipe - Chuck's Garden Soup

2 beets, chopped small
1 small potato, chopped small
1 onion, chopped small
1 tomato, chopped
1 Jalapeno, chopped

About a cup of potatoes, cut bite size
About a cup of green beans, cut bite size
2 Banana peppers, cut bite size
3 tomatoes, cut bite size
About 20 basil leaves, chopped
1 cucumber, seeded and cut bite size
A little cheese cut in small pieces
(Original recipe used 1 Laughing Cow Babybel per bowl)

Cook first set of ingredients in about 2 cups water for about 60 minutes in microwave at full power. Mash everything together but not too much.

Add potatoes and cook 5 minutes. Add green beans and banana peppers, cook 5 minutes or until done. Add the three tomatoes and basil, let sit for a few minutes to allow tomatoes to warm, put in bowls and top with cucumber and cheese. Eat.

Original receipted made up August 20, 2011 at the shop. Everything except cheese and water came from our garden. In other words, this is "What The Garden Provided For Lunch Today Soup." Jill says "it smells like the garden on a hot summer day."
