Fried Cabbage and Kielbasa

1 head green cabbage
1/2 Hillshire Farm® Polska Kielbasa (quarter package per person)
1-2 tbs olive or other good oil
2-5 cloves garlic
1/2 to 1 yellow onion (optional)
1 tsp celery seed or old bay seasoning (optional)
2 tbs paprika
1 bottle of your favorite beer, maybe a little more
Black and/or cayenne pepper to taste

Thick, cooked noodles, a handful before cooking works for two-three people

Instructions

Cut cabbage just as fine as you can, food processors don't do near as well as a good sharp knife and some time. Crush and chop garlic. Cut onions into slices and cut in half.

Fry cabbage in oil 'till it is cooked down a little. Stir constantly, you do not want to burn the cabbage and it will burn if you don't keep stirring. Once cabbage is cooked a little add the onions and garlic and keep frying until cabbage is browned, 20 or 30 minutes, stirring all the time especially near the end when it will burn very easy.

When cabbage looks like it can only take a little more frying before it burns, add the paprika, pepper(s) and celery seed or old bay. Celery leaves work well also, they carry about the same taste as the seed. Fry for a few more minutes to brown the paprika. Add Kielbasa and beer, quickly cover pot. Simmer for 1/2 hour up to maybe an hour. Check once in a while to be sure the pot does not go dry. Add a little water or beer if it gets low.

Cook noodles to be done when the cabbage is done, add into cabbage pot and stir it up.

Time to eat!
