Salmon and Sweet Peppers This is kind of a Costco special. We were there one day and found some salmon burgers that looked like they might be good. Costco also has bags of miniature sweet peppers that are multi-color fun and tasty as well as large boxes of baby bellas for not much money. So, our first taste of the salmon burgers was last night when I was looking for a fast meal. We had left over rice in the fridge and this took about 15-20 minutes from start to time to eat. I would think a nice salmon filet would work just a well as the burgers. 2 Salmon Burgers Instructions If you don't have pre cooked rice then start cooking rice first so it will be done at the same time as everything else. Half then quarter onion so you have large bite size pieces, slice stem off of mini peppers and leave whole, halve or quarter mushrooms. Add some water/wine and a little ghee/oil, cover and fry everything together in until mushrooms are done, pick out the mushrooms and onions and leave the peppers to fry some more until they start to char (your pan will be charred also). Press the peppers with a spatula a bit to speed the cooking and help char them. In the bowl with the onion and mushrooms add a spoon of ginger/garlic paste. Don't use too much, you might overpower the taste of the mushrooms and salmon. Once peppers are done or near done push them to the side and add salmon burgers to pan (with a little more ghee under them if you like). Cover and cook until done, about 4 minutes per side. Add a little more wine while cooking salmon if you want to. When you flip the salmon to cook the second side add the mushrooms and onion back to the pan. When the salmon is done, serve with rice and enjoy!
