Fruity Chicken

2-4 Boneless Chicken Brest
Half of a red onion
3-6 cloves garlic

1/3 - 1/2 bottle Cherry Salsa (www.SouthRidgeFarms.com)
2-4 TableSpoon Plum Jam
2-3 Shots Triple Sec
1 Teaspoon ginger powder (or 1/2-1 inch fresh grated)
1/2 Teaspoon Black Pepper (or to taste)
Olive or other good oil

Instructions

Cut chicken into bite size pieces, cut onion into slices and quarter them, crush garlic and chop coarse. Put into fry pan with olive oil and fry until chicken is browned. Add all other ingredients and simmer on low for 20-30 minutes. Your done!

Made up recipe 24 January 2008, served with oven baked potatoes coated with peanut oil and packaged seasoning and boiled garden broccoli. Yum!

Would also be good over rice or noodles.

Maybe try adding a little rice vinegar next time.
