Catfish Garam Masala

3 small whole channel cat, filets should work ok
1 onion sliced thin
3-4 cloves garlic crushed/chopped
3-6 tablespoons shredded sweetened coconut (easiest kind to find)
3 fresh cayenne peppers chopped
3 teaspoons butter
1 teaspoon roasted sesame oil
1-2 teaspoons garam masala
3-6 tablespoons orange cranberry sauce *
1/4 cup rice vinegar
water

Instructions

Wash catfish and lay in large covered fry pan. Pile all other ingredients except vinegar and garam masala on top of fish. Put vinegar in pan and add water to about 1/2 inch sprinkle some of the garam masala on top of everything. Bring to boil then reduce to lowest heat and simmer covered for about 10 minutes per inch of fish thickness at thickest part. Done when fish is easy to separate from bone in thickest part. Sprinkle on a little more garam masala when near done.

To serve, separate fish from bones. Serve everything in the pan with buttered mashed potatoes and cole slaw (fine chopped cabbage, pine nuts, crumbled feta cheese with a little ranch dressing). Yum!

Not tried but should be good:
Add some other veggies such as summer squash, bell pepper, broccoli, pea pods,

 * Orange Cranberry Sauce - 1 bag fresh cranberries, 1 whole orange, 1 cup sugar. Put it all in a food processor and blend for a very short time. Refrigerate and enjoy!  If you don't want to do this, you should be able to find something at your local grocery store.
