Oven Baked Coconut Catfish Filets

Butter
Peanut oil
Chipotle powder
Smoked Paprika
Black pepper
Lime juice
Shredded unsweetened coconut
Catfish filets

Instructions

Wash and thoroughly dry catfish. Brush one side with 50/50/ melted butter and peanut oil. Sprinkle on coconut, then spices. Allow to sit a few minutes. Flip onto dry plate and repeat oil, coconut, spices. Top with a little lime juice. Allow to sit a few minutes before baking 25 to 35 minutes at 350. First try was 350 and 30 minutes for some larger filets. Maybe try a little hotter and shorter time for smaller filets?

Served with brown rice and green beans. 10 January 2013
