Best Cornbread
3 TBS Butter
1 TBS oil - olive oil works fine
3 Cup Yellow corn meal
3 tsp Baking powder
1 tsp Baking soda
1 tsp salt (more or less)
2 eggs
1-1/4 Cup buttermilk
* buttermilk in recipe below seems to be too much, even for 3 cups of corn meal. Mix to very stiff batter that you need to push down in frying pan.
Instructions
Preheat oven to 425 degrees
Melt butter in cast iron frying pan, coat sides well. Don't get the pan too hot.
Mix dry ingredients together in a bowl.
Add egg and buttermilk, stir as little as needed to mix. Should be thick batter.
Add heated butter/oil to batter, still just enough to mix.
Put batter in pan and cook at 400 degrees for about half hour.
Enjoy with lots of honey and butter.
