Best Cornbread

5 TBS Butter
1 Cup Lonesome Stone Organic Pancake Mix (whole wheat mix)
1-1/2 Cup Yellow corn meal
1-1/4 tsp Baking powder
1/2 tsp Baking soda
1-1/4 Cup milk
2 eggs

Instructions

Preheat oven to 425 degrees
Melt butter in cast iron frying pan, coat sides well
Mix dry ingredients together in bowl
Whip eggs and milk together in second bowl
Add melted butter to milk and eggs. Don't drain pan completely, make sure edges are well coated.
Fold dry ingredients into milk, eggs and butter. Make sure everything is wet but don't over mix.
Pour into frying pan, cook in preheated oven for 18-20 minutes.
Remove from oven when toothpick inserted in bread comes out clean.
Allow to rest 5-10 minutes if you are able to resist.

Enjoy with lots of honey and butter.
